Rhubarb a vegetable????Who knew?

Hooray for Rhubarb!!!!!

Gently cook rhubarb in large pot with a very little bit of water. When cool, add sweetener, and 3 tbsp vanilla drink. A great way to get your vegetable intake in, and calm that craving for something sweet!

Pulled Pork

For those of you who love pork.....
Place pork roast in a crock pot for the day with a couple of onions, some montreal meat spice, and a bit of water. When well done, pour Ip bbq sauce all over it. Then while still in the crockpot, pull the meat apart with a fork into small strips, and let it simmer for a bit more.
Voila! Delicious pulled pork to serve with a terrific salad!

cauliflour rice

I saw this recipe on another blog and thought it was good enough to repost!

Mince cauliflour until the size of rice. (Not too small)

Lightly saute it until slightly soft, but still a bit crunchy.

Add sauteed minced onion.

Mix onion and cauliflour in pan, and sprinkle with a touch of salt and add 2 tbsp soy sauce.

Serve immediately.

YUM!

Taco Salad;

We love this in our house:

1. brown ground hamburg and sprinkle with taco seasoning or fajihta seasoning from epicure.

2. cut up onions, green and red pepper, cauliflour

3. Add everything together in a bowl, then add some canned tomatoes without the juice.

4. Crunch up some IP white cheddar chips and add them for some crunch (this is the best ingredient!)

5. Serve over a bed of sliced lettuce.

Meatloaf

Hi everyone: some of you have asked for this recipe...So here it is. You can pretty much add whatever you like and I'm sure it would still turn out great.

1. Brown up some lean ground hamburg-I use 2 lbs... and add lots of seasoning ie) oregano, thyme, salt, pepper, montreal meat spice...

2. Chop in a food processor any veggies you like. ie) mushrooms, green and red peppers, brocolli, cauliflour. If you use spinach, your meatloaf turns a bit green and sticky.

3. Beat together 4 eggs.

4. Add all ingredients together and place in a 9x13 loaf pan, sprinkle with some IP BBQ sauce and cook at 350F for about 30 min.

Turnip and Pepper fries

1 cup rutabaga strips
1 cup red/yellow/orange pepper strips
1 tsp EVOO
IP sea salt, pepper, and dried spices

Toss all in a bowl to coat. Roast on a baking sheet at 400 for 20 mins, toss, and bake for another 10 mins!

Easy Chicken Divan

Makes 2 IP meals!

2 cups chopped broccoli
5-8 ounces cooked and cubed chicken
1 IP soup package (chicken or leek or mushroom)

Place broccoli and chicken in small casserole. Mix soup following package directions. Pour over chicken and broccoli and bake at 375 for 30 mins or until broccoli is tender and soup is bubbly!
