Turnip and Pepper fries

1 cup rutabaga strips
1 cup red/yellow/orange pepper strips
1 tsp EVOO
IP sea salt, pepper, and dried spices

Toss all in a bowl to coat. Roast on a baking sheet at 400 for 20 mins, toss, and bake for another 10 mins!

Easy Chicken Divan

Makes 2 IP meals!

2 cups chopped broccoli
5-8 ounces cooked and cubed chicken
1 IP soup package (chicken or leek or mushroom)

Place broccoli and chicken in small casserole. Mix soup following package directions. Pour over chicken and broccoli and bake at 375 for 30 mins or until broccoli is tender and soup is bubbly!

Savory Broccoli

Got tired of plain broccoli - came up with this solution. So easy and so delicious!

Cut up 1 head of broccoli into bite sized pieces. Boil or microwave until just tender -do not overcook.

In a non-stick skillet, heat 2 tsp of EVOO. Add 1 tsp minced garlic and 1 tsp minced ginger - cook for 30 seconds. Add cooked broccoli, stir to coat, and serve! Makes 2 portions - heat up the leftovers to have with your lunch the next day.

Shepherd's Pie IP Style

This is delicious and almost as good as the original! Makes 2 portions, so you can share or have leftovers the next day!

Clean and chop 1 head of caulifower and either boil or microwave until tender. At the same time, brown 12 oz. extra lean ground beef in a non-stick skillet with a little chopped onion and diced red/green peppers and garlic. Put into the bottom of a small round casserole. Mash the cooked cauliflower with a hand blender, adding a little no-fat chicken or vegetable stock for consistency. Season with IP sea salt and fresh cracked pepper garlic and onion salt. Mound mashed cauliflower on top of beef mixture. Place under a hot broiler until 'potatoes' are brown and crispy on top.

If you want to prepare ahead of time, warm up in the oven at 350 for 30-40 mins, and do a quick broil at the end.
